Purple Sticky Rice is a naturally sticky (or glutinous) rice with a dark, shiny violet color that turns indigo once cooked. Often served with coconut milk, purple sticky rice boasts a naturally sweet flavor and chewy texture enhanced by serving it with sweet syrup, coconut cream, or fresh fruit.

Purple rice’s color is created by a flavonoid called anthocyanin pigment. This same pigment gives blueberries, eggplants, and other healthy fruits and vegetables their deep color. Anthocyanins are phytochemicals found in plants that may also have anti-inflammatory and anti-carcinogenic properties. A powerful antioxidant, anthocyanin has been linked to reducing cases of diabetes, obesity, and heart disease. 

Sticky purple rice is a whole grain, meaning the outer bran layer is intact. This makes it high in fiber, as well as slightly nutty in flavor.  It is a good source of protein, making it an excellent addition to a vegetarian diet.  Purple rice is also a significant source of iron, a mineral necessary for helping to make red blood cells and transport oxygen.

Directions for cooking:  Rinse well. Place 1 cup rice and 2 cups unsalted water in pot with lid, bring to a boil, cover, and simmer on low for 40 minutes. Remove from heat and let stand 10 minutes.
